Sharon's Seafood Fettuccini
Sharon borrowed the 'wine sauce' from a
'Joy of Cooking'
recipe. If you like Seafood, this is a wonderfully decadent preparation.
In a large fry pan, heat:
- 2 tbsp. butter
- 1/3 C white wine
add and saute:
- 1/2 pound sliced mushrooms
- 1 onion, diced medium fine
Set aside when done.
In the same large fry pan, heat:
- 2 tbsp. butter
- 1/3 C white wine
add and saute till just medium rare:
- 1/2 pound bay scallops (not the big Sea Scallops)
Remove from pan and set aside with:
- 1/2 pound cooked dungeness crab meat
- 1/2 pound cooked shrimp meat
In that same large fry pan, make the wine sauce. Heat:
- 8 tbsp. butter
- 8 tbsp. flour
Cook 2-3 minutes, making a roue.
Add:
- 4 chicken bouillon cubes
- 1 teas garlic
- 1 teas pepper
- 4 cups whole milk
- 1 cup white wine
Cook until thickened. Add seafood, mushrooms and onion. Serve over:
- fettucini with
- Parmesan cheese.
Makes 6 very hearty servings. Could feed more with appropriate sides, etc.
